Ingredients for 8 servings:
- 100 g dark chocolate
- 3 tbsp cocoa powder
- 3 tbsp cornstarch
- ¼ tsp salt
- 250 ml cream
- 3 large egg yolks
- 600 ml milk
- 80 g sugar
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes
Chop the chocolate into small pieces. Mix the cocoa powder, cornstarch, and salt in a saucepan. Slowly add the cream and stir until smooth. Add the egg yolks and mix in. Heat the milk and sugar in a separate saucepan until the sugar has dissolved. Bring the milk and sugar mixture to a simmer. Then add most of the milk to the cream and egg mixture and stir until all components are well combined. Then return the mixture to the saucepan with the remaining milk. Bring the pudding to a boil while stirring. When the pudding is bubbling, simmer for another two minutes, stirring constantly. Then remove from the heat and fold in the finely chopped chocolate until completely melted. Finally, transfer the pudding to molds and let cool. If you don’t want a pudding skin, you can simply cover the molds with plastic wrap.
