Chocolate roulade with mascarpone filling

Ingredients for 1 servings:

  • 180 g dark chocolate, in pieces
  • 3 tbsp water, hot
  • 5 egg yolks
  • 150 g sugar
  • 5 egg whites
  • Powdered sugar, for garnish
  • 100 g jam (bitter oranges)
  • 250 g mascarpone
  • 250 g crème fraîche
  • 100 g chocolate, chopped
  • 3 tsp sugar

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

First, line a rectangular baking sheet with parchment paper and grease or spray with cooking spray. For the dough: Place the broken chocolate in a glass bowl and melt over boiling water. Stir occasionally. Then add 3 tablespoons of hot water and mix well. The chocolate will darken. Whisk the 5 egg yolks with the sugar until the mixture becomes lighter in color. Mix in the melted chocolate. Beat the egg whites until stiff and fold in. Immediately place on the baking sheet and bake at 180°C for about 15 minutes. After baking, cover the dough with baking paper and place a damp kitchen towel over it and let cool slightly. Turn the dough out onto a sheet of parchment paper dusted with icing sugar and spread with the bitter orange marmalade. For the filling: Mix the mascarpone, crème fraîche, chopped chocolate, and sugar well. Spread the filling on the dough and carefully roll up the roulade.
