Ingredients for 1 servings:

  • 6 eggs
  • 4 tbsp water, warm
  • 200 g sugar
  • 150 g flour
  • 75 g cornstarch
  • 50 g cocoa powder
  • 2 tsp baking powder
  • 1 pinch of salt

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

In a mixing bowl, beat the egg yolks and sugar until frothy, then slowly add the water and salt. In another mixing bowl, beat the egg whites until frothy and carefully fold in. Now mix the flour, cornstarch, cocoa, and baking powder and sift them onto the batter. Carefully fold this in as well. Line the bottom of a springform pan with baking paper, pour in the batter, and bake for 40-45 minutes in an oven preheated to 190-200°C (or gas mark 3). Be careful, this all has to happen quickly; the batter shouldn’t be left to stand for long, otherwise it will collapse and lose its fluffiness.
