Chopped bean soup

Ingredients for 4 servings:

  • 1 onion(s), diced
  • 300 g beans (chopped beans)
  • 4 tbsp flour
  • 800 ml broth
  • 4 potatoes, diced
  • 1 bunch of parsley
  • 1 bay leaf
  • 300 g smoked pork or ham – Mettwurst, diced
  • 1 tbsp Thyme, shredded, dried
  • 1 tbsp marjoram, shredded, dried
  • 200 ml cream

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Soup from the Tecklenburger Land

Finely chop the onion and cook in butter until golden brown. Add the string beans, dust with flour, and top with broth. Add the diced potatoes and diced smoked pork or ham and mettwurst, and cook for about 25 minutes. Cook the parsley and bay leaves, then discard before serving. Season with thyme and marjoram, adding savory if desired. The soup should be slightly creamy. Stir in the cream.
