Ingredients for 4 servings:

  • 2 chorizos
  • 2 tbsp honey
  • 400 ml red wine
  • 2 tbsp red wine vinegar or balsamic vinegar

First, slice the chorizo. Then, heat the honey in a saucepan and deglaze with the red wine. Add the vinegar and bring back to a boil. Reduce the heat and add the sausage slices to the red wine broth, which is no longer boiling. The sausage slices are only being heated, not cooked! Let them simmer for about 15 minutes and then remove them from the broth. Reduce the broth by half and add the sausage slices back in at the end. The longer the chorizo ​​is heated, the harder it becomes—at least that’s what I’ve observed. I serve it in a bowl with ciabatta on the side.
