Christel's tomato soup

Ingredients for 8 servings:

  • 1 onion(s)
  • some butter
  • 4 tbsp flour, heaped
  • 750 ml meat broth
  • 1,000 ml tomato(s), strained
  • n. B. Salt
  • n. B. Pfeffer
  • some croutons
  • 1 cup crème fraîche
  • some parsley, chopped

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Finely dice the onion. Melt the butter in a soup pot and sauté the diced onion until golden brown. Add the flour and sauté. Pour in the broth while stirring. Add the passata. Bring to a gentle boil. Season with salt and pepper. Serve with croutons, crème fraîche, and chopped parsley.
