Christmas apple compote

Spread the love

Ingredients for 4 servings:

  • 2 kg apples, preferably slightly sour Boskoop etc.
  • 4 tbsp pear juice
  • 1 lemon(s), juice
  • 2 tbsp sugar
  • 50 ml mulled wine
  • 1 pinch of cinnamon

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

also perfect as an apple strudel filling

Peel and core the apples, cut into small pieces, and drizzle with lemon juice. It’s best to add a few drops to the pieces while peeling and cutting to help retain their color. Add the pear juice, sugar, and cinnamon, bring everything to a boil over low heat, and when it’s boiling, add the mulled wine. Let everything simmer for about 10-15 minutes, depending on whether you like the pieces. If not, let it cook a little longer. Perfect as a side dish for waffles or as a filling for strudel.
