Ingredients for 3 servings:
- 500 g minced meat, mixed
- 2 large cucumbers
- 1 m.-sized onion(s)
- some tomato paste
- 1 tbsp flour
- 500 ml vegetable stock
- some oil for frying
- some salt
- some pepper
- some sweet paprika powder
- some cayenne pepper
- possibly dill
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes
Peel the cucumbers, halve them lengthwise, and scoop out the seeds with a teaspoon. Then cut the cucumbers into strips about 1 cm wide. Peel and dice the onion, and sauté in a little oil until translucent. Add the minced meat and fry. Season the meat generously with salt, pepper, paprika, and cayenne pepper. When the minced meat is nicely browned, add a little tomato paste and mix well. Pour the flour over the minced meat and stir. Now add the cucumber pieces and fry them with the rest. At this point, I always take the insides of the cucumbers that I previously scooped out and press them through a very fine sieve to get the juices. This gives the cucumber an even finer flavor. Then pour in the vegetable stock and let everything simmer for about 10 minutes. Finally, add a dash of cream and season again to taste. Can be refined with some fresh dill. Served with boiled potatoes.
