Cooked Rondini pumpkin with herb curd

Ingredients for 4 servings:

  • 4 pumpkins (Rondini)
  • herb curd or cream cheese
  • salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Simply pierce the pumpkins and boil them in salted water for 20 minutes, just like boiled potatoes. Then halve the pumpkins, hollow them out, season with salt and pepper, and fill the cavity with the herb curd. Scoop out the pumpkin flesh and curd with a spoon, leaving only the skin. Quick, easy, and delicious.
