To prepare the dough, knead together the flour, butter, 1 tablespoon of sugar, and a pinch of salt, then form it into a smooth ball of dough with a little water. Separate a small ball of dough (for the “strings”) from the large ball of dough (for the base) and chill both. To prepare apple compote, peel and chop 2 apples. Place them in a bowl with 2 tablespoons of sugar and a pinch of cinnamon. Microwave for 5 minutes (or simmer in a saucepan over low heat for 15 minutes), then puree into applesauce. Line the tart pie dish with parchment paper or flour and grease. Press the large ball of dough into the tart pie dish, pull up the edges slightly, and then prick small holes with a fork. Next, peel the other 2 apples and cut them into thin slices. Spread the apple compote evenly over the dough and arrange the apple slices densely on top. Form long, thin strings from the small ball and arrange them in a lattice pattern on the pie. Then sprinkle some cinnamon over the entire pie, if desired. Finally, bake at 200°C for about 30 minutes, checking occasionally to see if the edges and strings are lightly browned. Then the pie is done. Remove when you’re hungry, cut into pizza slices, and enjoy.
