Ingredients for 4 servings:

  • 280 g flour
  • 125 g sugar
  • 210 g butter
  • 2 egg yolks
  • 105 g ground almonds
  • 1 packet of vanilla sugar
  • 2 pinches of baking powder

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Mix all the ingredients together, making sure the butter is cold. Knead everything with your hands. At first it will be very crumbly, so you’ll think you need to add more butter. Just keep kneading patiently. Wrap the ball in aluminum foil and place it in the refrigerator for an hour. Roll it out as usual, using a little flour as a base so the dough doesn’t stick to the table, and cut out with cookie cutters as usual. I then always roll the cookies in sugar and place them on a baking sheet. Of course, you can decorate the cookies differently, for example with sprinkles. Bake for about 20 minutes at 180 degrees Celsius (350 degrees Fahrenheit). When the cookies are lightly browned, remove them and carefully place them in a bowl. These ingredients are enough for 2 1/2 baking sheets. I’m posting the recipe online because so many people have asked me about these cookies! I hope you enjoy them too.
