Ingredients
 

For approx. 40 pieces:

  • 150 g Dark chocolate with 70% cocoa
  • 2 Eggs size M
  • 1 Egg yolk size M
  • 250 g Powdered sugar
  • 1 tbsp Brown rum
  • 1 tsp Cinammon
  • 1 pinch Grated nutmeg
  • 250 g Ground almonds
  • 3 tbsp Wheat flour type 405
  • Parchment paper

Instructions
 

  • Finely grate the chocolate, separate the eggs. Mix 3 egg yolks, 150 g powdered sugar, rum and spices until frothy. Beat the egg whites until stiff. Fold the almonds, chocolate, wheat flour and egg whites into the egg yolk mixture and cover, chill for about 30 minutes.
  • Put 2,100 g of powdered sugar in a deep plate. Shape the mixture into approx. 40 oval loaves and roll them in the powdered sugar. Place on two baking sheets lined with parchment paper.
  • Bake one after the other in a preheated oven (150 ° C top / bottom heat, 125 ° C circulating / hot air) for 15-20 minutes. Let cool on a wire rack.
