Ingredients for 4 servings:

  • 200 g spiced speculatius biscuits
  • 4 egg yolks
  • 4 tsp, heaped sugar
  • 50 g rum raisins, alternatively soak raisins in apple juice beforehand
  • 4 tbsp rum, alternatively apple juice
  • 300 ml cream
  • 1 vanilla pod(s)
  • 1 pinch of speculatius spice
  • chocolate sauce
  • whipped cream

Instructions

Working time approx. 15 minutes; Rest time approx. 12 hours; Total time approx. 12 hours 15 minutes

Finely crumble the spiced speculatius biscuits and mix with the vanilla bean pulp, rum raisins, rum, and speculatius spice. Whip the cream until stiff. Combine the egg yolks and sugar until thick and creamy. Thoroughly mix the speculatius biscuit mixture with the egg custard. Then carefully fold in the whipped cream. Rinse a baking dish with water and then line it with plastic wrap. Pour the parfait cream into the dish and cover with plastic wrap. Then freeze for four to six hours, preferably overnight. Remove the parfait from the freezer about 30 minutes before serving. Cut into slices and arrange on a plate with a dollop of chocolate sauce and dollops of cream.
