Ingredients for 4 servings:

  • 300 ml milk
  • 100 g marzipan
  • 10 g cornstarch
  • 1 pinch of salt
  • 2 egg yolks
  • 5 g vanilla sugar
  • 40 g powdered sugar

Heat 200 ml of milk with the marzipan, stirring constantly, until dissolved. Gradually whisk the cornstarch into 30 ml of milk until smooth. Bring the marzipan milk to a boil and whisk the cornstarch into the hot milk. Bring back to a boil briefly and then cool, stirring occasionally with a whisk. Beat the egg yolks with salt, powdered sugar, and vanilla sugar until light and creamy. Stir the remaining milk into the cold pudding mixture and fold this into the egg foam. Pour the mixture into the ice cream maker. After about 20 minutes in the ice cream maker, you’ll have wonderful marzipan ice cream.
