Ciabatta with goat cheese, arugula and bacon

Ingredients for 2 servings:

  • 1 ciabatta
  • 1 dash of lemon juice
  • 1 pack of bacon
  • 1 handful of arugula
  • 1 pinch(s) of pepper
  • 1 dashes olive oil
  • 1 point goat cheese or goat cream cheese

Instructions

Working time approx. 3 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 18 minutes

Take a baguette or ciabatta and cut it open so you have two halves. Then spread both halves with goat’s cheese or place goat’s cheese on top. Sprinkle a handful of arugula on each half. Fry the bacon until crispy and pat it dry. Once it’s cooled down a bit, you can crumble it over the cheese. It looks great and is incredibly tasty. Finally, add a dash of lemon juice, pepper, and a drizzle of oil. If you like, you can also crumble regular Gouda over it; my husband really likes that. The oven should now be preheated to 180 degrees Celsius. Bake the baguette for 15-20 minutes, until the cheese is slightly browned. This also works great with rolls, salami instead of bacon, etc. Ideal snack for those short on time.
