Ingredients for 8 servings:

  • ½ cup vinegar
  • 1 tbsp salt
  • 4 cloves garlic
  • 450 g yogurt
  • 8 eggs
  • 3 tbsp butter
  • 2 tsp paprika powder, hot

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Bring a large pot of water to a boil and add the vinegar and salt. Peel the garlic and crush it with the salt. Mix the garlic salt with the yogurt, then pour the garlic yogurt onto a large plate and spread it out. Crack the eggs one at a time onto a saucer and carefully drop them one at a time into the boiling vinegar water. Poach until the whites are set but the yolks are still runny. This takes about 3 minutes. Remove the eggs from the water with a slotted spoon, drain on kitchen paper if necessary, and place them on top of the yogurt. Melt the butter in a pan and sweat the paprika powder for about 2 minutes, stirring constantly. Drizzle the paprika butter over the eggs and yogurt.
