Ingredients for 6 servings:

  • 6 eggs
  • 3 tsp mustard
  • 3 tsp mayonnaise
  • 2 tbsp cream
  • Salad, for garnishing
  • Salt
  • pepper
  • Paprika powder

Hard-boil the eggs, rinse well, and let cool for a few minutes. Halve them, scoop out the yolks, and place them in a bowl, e.g., using a small spoon. Mix the cream, mayonnaise, and mustard with the egg yolks until the paste is as smooth as possible. Season with salt and pepper. Arrange the egg white halves on lettuce leaves and fill with the egg yolk paste; this is best done using a piping bag. Sprinkle with paprika. Serve with baguette or white bread.
