Cinnamon Apple Muffins

Ingredients for 12 servings:

  • 2 apples
  • 260 g flour (if you have it at home, then it’s also great to use half wholemeal flour)
  • 2 tsp baking powder
  • 2 tsp cinnamon
  • ½ tsp baking soda
  • 80 g walnuts, chopped (hazelnuts or almonds will also work)
  • 1 packet of vanilla sugar (bourbon or homemade 2 tsp)
  • 1 egg(s)
  • 150 g brown sugar
  • 100 ml oil (sunflower oil)
  • 300 ml buttermilk
  • powdered sugar

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Wash and core the apples, then cut them into very small pieces. Mix the flour with the baking powder, cinnamon, nuts, baking soda, vanilla sugar, and apple pieces. In another bowl, beat the egg and whisk it with the sugar, oil, and buttermilk. Gently stir in the flour mixture. Line a muffin tin with paper baking cups and fill with the batter. Bake in a preheated oven at 160°C (325°F) for 20-25 minutes. Let cool slightly (about 5 minutes). Dust with powdered sugar and enjoy!
