Cinnamon muffins

Ingredients for 1 servings:

  • Butter for the baking tray (or paper baking cups)
  • 240 g flour
  • 2 tsp baking powder
  • 1 packet of vanilla sugar
  • ½ tsp salt
  • 200 g sugar, of which 100 g for the dough
  • 150 g butter, of which 80 g for the dough
  • 1 egg(s)
  • 110 g sour cream
  • 60 ml milk
  • 1 tsp cinnamon

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Preheat oven to 190°C (160°C fan/gas mark 2-3). Prepare the baking tray. Mix flour, baking powder, vanilla sugar, and salt in a large bowl. Melt 80g butter and mix with 100g sugar, the egg, sour cream, and milk in another bowl. Stir the wet ingredients into the flour mixture until a smooth batter forms. Divide the batter evenly among the muffins and bake on the middle rack for 18-20 minutes, until lightly browned. Let cool in the pan for 10 minutes, then remove from the pan and cool completely on a wire rack. Melt the remaining butter and pour into a small bowl. In another bowl, mix the remaining sugar with the cinnamon. Dip each muffin first in the butter, then in the cinnamon sugar. Enjoy fresh.
