Ingredients for 1 servings:
- 120 ml chickpea water
- ½ tsp cream of tartar baking powder
- 250 g powdered sugar
- 1 packet of vanilla sugar
- 3 drops of bitter almond oil
- 1 tsp, heaped cinnamon powder
- 800 g almonds, ground
Instructions
Working time approx. 40 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 1 hour 5 minutes
Preheat oven to 130°C fan/convection oven. Mix the chickpea water with the cream of tartar and beat for 2-3 minutes until stiff peaks form. Stir in the powdered sugar and continue beating for up to 5 minutes until thickened. Set aside 4 heaped tablespoons of the sugar mixture/glaze. Fold the vanilla sugar, bitter almond oil, and cinnamon into the remaining sugar mixture. Finally, add the ground almonds. This makes a firm dough. Roll out the dough to a thickness of 0.5-1 cm and cut out stars. Place on a baking sheet lined with baking paper and spread with the reserved sugar mixture. Bake in the hot oven for approx. 20-25 minutes. Tips: If the dough sticks to the rolling pin on the work surface, dust both with powdered sugar. Have a bowl of powdered sugar ready for the star cutter to dust with so that nothing sticks when cutting out!
