Clafoutis aux groseilles

Ingredients for 4 servings:

  • 150 g red currants
  • 2 large eggs
  • 50 g sugar
  • 50 g flour
  • 2 packs of vanilla sugar, bourbon
  • 1 pinch(s) cinnamon (optional)
  • 1 tbsp cherry brandy
  • 2 tbsp crème fraîche
  • possibly milk
  • some powdered sugar for dusting

Working time approx. 20 minutes; Total time approx. 20 minutes

Dessert not just for those with a sweet tooth

Clean the currants and place them in a 26 cm diameter pie dish (ceramic or glass). Beat the eggs with sugar until frothy, then stir in the flour, seasonings, and crème fraîche. If the batter is too stiff, add a few drops of milk. Pour the mixture over the currants. Bake in a preheated oven at 180°C for about 35 minutes. Dust with powdered sugar and serve immediately. Serve with vanilla ice cream or vanilla sauce.
