Clafoutis with mulberries

Ingredients for 4 servings:

  • 2 eggs
  • 40 g sugar
  • ¼ vanilla pod(s), the pulp
  • 1 pinch of salt
  • 1 tbsp Amaretto
  • 70 g flour
  • 180 ml milk
  • 350 g mulberries
  • Powdered sugar for dusting
  • Fat for the mold

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 55 minutes

Variation of the classic French clafoutis

Preheat oven to 180°C (top/bottom heat: 160°C) and grease 4 small casserole dishes or 1 large casserole dish. Beat eggs and sugar until frothy. Stir in vanilla bean paste, salt, and Amaretto. Then stir in the flour and finally the milk. Pour the batter into the dishes. Rinse the mulberries, drain them, pit them, arrange them on top of the batter, and bake for 30-35 minutes. Remove from the oven and sprinkle with powdered sugar to serve. Other fruits, such as cherries, are also suitable instead of mulberries.
