Clärchen's Apricot Cake

Ingredients for 1 servings:

  • 400 g flour
  • 200 g butter, soft
  • 4 eggs
  • 4 packets of vanilla sugar
  • 3 gr. can/n apricot(s), sugared
  • 1 pack of almond flakes
  • 250 ml cream
  • Grease for the tray

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 20 minutes

Low in sugar, easy, quick, delicious, makes about 10 pieces.

Cream the softened butter until fluffy, then add the vanilla sugar and eggs one at a time. Stir in the flour a spoonful at a time. The batter should fall off the spoon. Grease a large baking sheet and spread the batter evenly on the sheet. Sprinkle 1/2 of the almonds over the batter. Drain the apricots and spread them evenly over the batter, pressing them down slightly. Sprinkle the remaining almonds over the batter and pour over the cream. Bake at 180°C (fan oven) for about 45–50 minutes. Tip: It tastes even better with cream!
