Ingredients for 1 servings:

  • 5 eggs
  • 250 g sugar
  • 4 packets of vanilla sugar
  • 350 g flour
  • 1 packet of baking powder
  • 175 ml orange soda
  • 125 ml oil
  • 1 class can/n Orange(s) – Tangerines
  • 500 g quark (low-fat quark)
  • 250 g mascarpone
  • 4 tbsp orange juice
  • 100 g powdered sugar

Instructions

Working time approx. 20 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 20 minutes

Whisk the eggs, sugar, and 1 sachet of vanilla sugar until creamy. Mix the flour with the baking powder and stir into the egg mixture alternately with the lemonade and oil. Spread the batter evenly on a baking sheet lined with parchment paper. Bake in a preheated oven at 175°C for about 20 minutes. Turn out the batter and peel off the parchment paper. Drain the oranges and tangerines in a sieve. Whisk the quark, mascarpone, orange juice, 3 sachets of vanilla sugar, and the powdered sugar until smooth. Spread the cream in waves over the batter. Top with the fruit and chill for at least 2 hours, the longer the better, as the batter will soften slightly.
