Ingredients
 

  • 2 slices Beef liver
  • Flour
  • Salt
  • Pepper
  • Clarified butter

For the onion rings:

  • 1 small Onion
  • Clarified butter
  • Sugar

For the apples:

  • 1 Apple
  • Clarified butter
  • Salt

For the mashed potatoes:

  • 4 medium Potatoes
  • 1 tbsp Butter
  • Milk
  • Salt
  • Nutmeg

Instructions
 

  • Boil the potatoes, I did it in the microwave, it goes faster with the small amount. To do this, insert the potatoes a few times with the knife, put them in a microwave-safe container with a lid, add some water and cook in the microwave for about 7 minutes.
  • Peel the apple, remove the core and cut into slices. Peel the onion and cut into rings. Turn the liver slices in flour.
  • First, fry the onion rings in a pan with clarified butter. When they are a bit seared, sprinkle some sugar over them and let them caramelize.
  • In another pan, fry the apples in clarified butter on both sides and lightly salt.
  • If the onions and apples are already roasting and the potatoes are cooked, the liver can be fried in clarified butter. Don't start too early, it doesn't take that long.
  • Peel and mash the potatoes. Melt the butter and warm up the milk, stir both into the potatoes and pound until smooth. Season to taste with salt and nutmeg.
  • Arrange the mashed potatoes on a plate, spread the onion rings on top. Add the apple slices and the liver. Season the liver with salt and pepper.
