Classic Potato Salad with Sausages

The perfect classic potato salad with sausages recipe with a picture and simple step-by-step instructions.

  • 800 g Waxy potatoes
  • Salt
  • 4 Eggs
  • 1 Apple
  • 100 g Gherkins pickles
  • 250 g Yogurt
  • 1 Onion
  • 100 g Salad mayonnaise
  • 2 tsp Mustard
  • Salt and pepper
  • Sugar
  • 1 tbsp Lemon juice
  • Cayenne powder
  • 4 piece Wiener sausages
  • 0,5 bunch Chives fresh
  1. Scrub the potatoes, just cover them with water in a saucepan, add plenty of salt to the water, bring to the boil, then cook with the lid slightly open over a medium heat for 20-25 minutes.
  2. Cook the eggs in boiling water for 3-4 minutes until soft to hard, then quench and peel. 2 coarsely chop the eggs. Quench potatoes, peel and cut into slices.
  3. Cut the apple in half and remove the core. Peel one half of the apple and cut into thin strips. Cut the other half into thin slices. Finely chop the cornichons. Cut the chives into fine rolls.
  4. Cut the onion into fine cubes, stir in the mayonnaise, yoghurt, mustard, a little salt, pepper, sugar, cayenne pepper and lemon juice. Mix in the potatoes, gherkins, apple strips, chopped egg and half of the chives. Let the salad stir for 20 minutes.
  5. Heat the Viennese sausages in a saucepan with water (never boil or they will burst). Season the salad to taste. Halve 2 eggs. Garnish the salad with apple slices, halved eggs and chives, serve with the wiener sausages.
