Classic Tiramisu

Ingredients for 6 servings:

  • 500 ml cream
  • 5 eggs
  • 100 g sugar
  • 500 g mascarpone
  • 240 ml coffee (espresso)
  • 250 g ladyfingers
  • 3 tbsp Amaretto or Marsala liqueur
  • 3 tbsp cocoa powder
  • 2 points cream stiffener
  • 2 tbsp vanilla sugar

Instructions

Working time approx. 30 minutes; Rest time approx. 4 hours; Total time approx. 4 hours 30 minutes

In a bowl, mix the egg yolks, sugar, and mascarpone. In another bowl, whip the cream until stiff, slowly adding the cream stiffener and vanilla sugar. Then whip the egg whites until stiff. Fold the cream and egg whites into the cream. Mix the cooled espresso with the vanilla sugar and the liqueur and add a few tablespoons to the cream. Line a baking dish with ladyfingers, drizzle with espresso, then spread a layer of cream on top. Spread another layer of ladyfingers and the remaining cream on top. Place the tiramisu in the refrigerator for a few hours, or ideally overnight. Sprinkle with cocoa powder before serving.
