Cloud buns with cinnamon

Ingredients for 1 servings:

  • 3 eggs
  • 3 tbsp quark, 40%
  • ½ tsp baking powder
  • 1 pinch(s) cinnamon or stevia

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes

Low carb, Candida-friendly, sugar-free, vegetarian

First, separate the eggs. Add the quark and cinnamon to the egg yolks and mix well until smooth. Then add the baking powder to the egg whites and beat until stiff. Make sure they are really stiff, otherwise they won’t work. Carefully fold the egg yolk mixture into the beaten egg whites. Place small tablespoonfuls onto a baking sheet. I find it works best if I use a wire rack instead of a baking sheet. Flatten the clouds slightly, but not completely, and bake at around 150-180 degrees Celsius for up to 25 minutes. Turn the rack occasionally and keep an eye on the clouds to make sure they don’t burn. After baking, let the rolls cool slightly and then top them as desired. Butter, avocado, tomato with onions, cheese, chives, lettuce, etc. all work well.
