Cocoa-date waffles

Ingredients for 4 servings:

  • 200 ml kefir
  • 200 ml milk
  • 3 eggs
  • 100 g butter
  • 600 g wholemeal spelt flour, or another flour
  • 1 packet of baking powder
  • ½ tsp salt
  • 3 tbsp cocoa
  • 100 g dates (4 large Medjoul dates)

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 45 minutes

without sugar and with spelt flour

Halve the dates and remove the pits. Combine all the wet ingredients and the dates in a bowl and blend briefly, ideally with an immersion blender (or similar) to ensure the dates dissolve well. Add the flour and the remaining dry ingredients and whisk until smooth. Bake the waffles as usual.
