Coconut cake for one baking tray

Ingredients for 12 servings:

  • 2 cups buttermilk
  • 3 cups sugar
  • 4 cups flour
  • 2 eggs
  • 1 ½ packets of baking powder
  • 2 cups desiccated coconut
  • 2 packets of vanilla sugar
  • 1 cup of cream (cold)

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Combine buttermilk, 2 cups of sugar, flour, eggs, and baking powder and spread on a baking sheet. Mix together desiccated coconut, 1 cup of sugar, and vanilla sugar and pour over the batter. Bake for 15-20 minutes at 175°C (350°F). Then, while the cake is still hot, top with 1 cup of chilled sweet whipped cream.
