Coconut chocolate muffins

Ingredients for 1 servings:

  • 125 g flour
  • 125 g butter, soft
  • 125 g sugar
  • 1 tsp, heaped baking powder
  • 2 m.-sized eggs
  • 60 g desiccated coconut
  • 60 g chocolate, whole milk, chopped
  • 60 g chocolate coating

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Muffins with coconut flakes and chocolate chips in the batter, as well as a chocolate glaze.

Preheat the oven to 190°C. Arrange the paper baking cases on a baking sheet. Place the butter and sugar in a mixing bowl and mix with a wooden spoon until evenly creamy. Then, beat the eggs with a fork until fluffy and gradually pour them into the butter and sugar mixture. Mix everything well. Fold the flour into the batter in small amounts. Stir the desiccated coconut and chopped milk chocolate into the batter. Spoon the batter into the paper baking cases. Bake in the oven for about 20-30 minutes. When the muffins are golden brown, they are ready. Remove from the oven and let cool completely. Melt the chocolate coating in a water bath and carefully spread it over the muffins. Let dry thoroughly.
