Coconut curd with apple, banana and cranberries

Ingredients for 2 servings:

  • 150 g coconut milk
  • 250 g quark
  • 2 tbsp sugar
  • 1 banana(s)
  • 1 small apple
  • 2 tbsp water
  • 1 tsp sugar
  • e.g. rusk (coconut rusk), optional
  • 2 tbsp cranberries, dried

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 3 minutes; Total time approx. 13 minutes

Whisk together coconut milk, quark, and sugar until creamy. Peel and slice the banana. Wash, core, and dice the apple. Sauté with sugar and water until tender. If you like, first add some crumbled coconut rusks to the glasses. Layer the cream on top, then top with the fruit. Sprinkle with cranberries and serve.
