Coconut ice cream

Spread the love

Ingredients for 4 servings:

  • 150 ml milk
  • 200 ml cream
  • 80 g sugar
  • 100 g desiccated coconut
  • 1 tbsp lemon juice

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

tastes almost like the Bounty filling

Combine milk, cream, sugar, coconut flakes, and lemon juice until well blended (I blend it in a blender, which helps break up the coconut flakes a bit). Chill the entire mixture in an ice cream maker for about 20 minutes. (I use a KitchenAid ice cream bowl instead of an ice cream maker. After about 20 minutes, the ice cream has a very creamy consistency. It will firm up in the freezer.) It tastes almost exactly like the filling in the famous chocolate bar.
