Coconut muffins

Ingredients for 1 servings:

  • 3 eggs
  • 250 g mascarpone, reduced fat
  • 200 g desiccated coconut
  • ½ pack of baking powder
  • 1 pinch of salt
  • 4 tbsp, heaped stevia-based sweetener

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Separate the eggs and beat the egg whites with a pinch of salt until stiff peaks form. Combine the mascarpone and egg yolks, then add the desiccated coconut, baking powder, and sweetener. Finally, fold in the egg whites. Pour the batter into 12 muffin cups and bake at 180°C (350°F) for 20-30 minutes. The raw batter will have a slightly bitter aftertaste due to the sweetener. However, this will completely disappear during baking.
