Ingredients for 12 servings:

  • 100 g butter
  • 150 g flour
  • 2 tsp baking powder
  • 2 m.-sized eggs
  • 200 g sour cream
  • 150 g sugar, or cane sugar
  • 200 g desiccated coconut
  • 8 tbsp coconut milk or coconut liqueur

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Preheat the oven to 185°C. Grease the muffin tin if necessary. Melt the butter. Sift the flour with the baking powder. Mix the desiccated coconut with the coconut milk or coconut liqueur and let it sit. Mix the eggs, sour cream, and sugar. Add the melted butter. Add the flour mixture and stir thoroughly. Fold in the coconut mixture. Divide the batter evenly among the muffin cups and bake at the specified temperature for about 20 minutes.
