Coconut Panna Cotta

Ingredients for 4 servings:

  • 2 tbsp sugar
  • 250 ml coconut milk
  • 250 ml cream
  • 3 sheets of gelatin
  • Fruits, of your choice

Working time approx. 15 minutes; Total time approx. 15 minutes

Variation of the Italian classic

Soak the gelatin in cold water. Stir in the coconut milk, cream, and sugar, bring to a boil, and simmer gently for a few minutes. Squeeze out the gelatin and dissolve it in the hot cream mixture. Refrigerate until solid (about 3-4 hours) and serve turned out or as dumplings with fresh fruit. For a more “crunchy” treat, stir in some toasted coconut flakes. Then, after about an hour of chilling, stir again to ensure the coconut flakes are evenly distributed.
