Sabayon with white wine on strawberries

Ingredients for 4 servings:

  • 4 egg yolks
  • 80 g sugar
  • 140 ml white wine
  • ½ lemon(s), zest, grated
  • ½ orange(s), zest, grated
  • 500 g strawberries, halved
  • Lemon balm

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Divide the strawberries among 4 dessert bowls. For the wine foam, whisk the remaining ingredients over a hot water bath for about 4 minutes until frothy and creamy, until it begins to rise in volume. Then remove the bowl from the water bath and continue whisking for another 1-2 minutes to increase stability. Pour warm over the strawberries and serve immediately, garnished with lemon balm. Incredibly simple yet simply stunning!
