Ingredients for 4 servings:
- 4 sheets of gelatin
- 200 ml coconut milk
- 250 g cream
- 40 g sugar
- 1 vanilla pod(s)
- Berries (raspberries, blueberries, strawberries, etc.)
- powdered sugar
Instructions
Working time approx. 20 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 20 minutes
Soak the gelatin in cold water. Combine the coconut milk, cream, and sugar. Scrape out the vanilla pod and add the seeds and pod to the coconut cream. Simmer over low heat for 5 minutes. Remove from the heat and remove the pod. Stir the gelatin into the hot cream and fill molds with ramekins. Let set in the refrigerator for 3 hours. Turn the mixture out onto a plate, arrange the berries around it, and sprinkle with powdered sugar.
