Ingredients for 4 servings:

  • 1 cup(s) rice (jasmine rice)
  • 1 cup(s) coconut milk, unsweetened, non-fat
  • ½ cup(s) water
  • Butter, optional

Instructions

Working time approx. 5 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Rinse the rice in a pot with plenty of water 2-3 times until the water becomes noticeably clearer. Strain the water. Add the coconut milk and half a cup of fresh water to the rice and let it soak for 10 minutes. Then bring the rice to a boil on the stove and immediately reduce the heat to medium-low. Simmer with the lid on for about 20 minutes until the water has evaporated. Add a knob of butter, if desired. For an extra kick, add ground coriander seeds or other spices. This basic recipe can also be prepared in a sweet version.
