Coconut semolina pudding with strawberries

Ingredients for 4 servings:

  • 500 g strawberries
  • 200 ml coconut milk
  • 1 tbsp sugar
  • 1 pinch of salt
  • 65 g semolina

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 20 minutes

Puree 300g of strawberries. Add to a saucepan with the coconut milk, salt, and sugar, stir, and heat. Stir in the semolina and bring to a boil. Turn off the stovetop and let it swell for about 5 minutes. Pour into four glasses. Chop the remaining strawberries and arrange on top.
