Cod fillet with celery

Ingredients for 4 servings:

  • 500 g celery
  • 250 g carrot(s)
  • 40 g butter
  • 750 g cod fillet(s), alternatively another fish fillet
  • lemon juice
  • salt and pepper
  • some sugar
  • 250 ml cream
  • 50 ml white wine
  • 2 tbsp sweet mustard (homemade mustard)

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

Cut the celery and carrots into sticks and cook in half the butter, covered, for 15-20 minutes. Add a splash of water if necessary. Wash the fish, pat dry, and drizzle with lemon juice, salt, and pepper. Then gently fry the fillet on both sides. Keep the fish warm in a preheated oven at 50°C (fan oven). Deglaze the pan with white wine and cream and simmer over high heat. Season with salt, pepper, a little sugar, and homemade mustard (sweet mustard). Serve the fish with the vegetables.
