Cod in mandarin curry sauce

Ingredients for 2 servings:

  • 400 g cod fillet(s)
  • 200 ml milk (skimmed milk)
  • 1 can of tangerine(s)
  • 1 bunch of spring onions
  • 200 g mushrooms
  • Salt
  • lemon juice
  • curry powder
  • Sauce thickener

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Low in calories

Salt the cod, drizzle with lemon juice, and place in a baking dish. Mix the skimmed milk with the curry powder and add 6 tablespoons of the canned mandarin orange juice. Slice the spring onions and the mushrooms. Add both to the sauce along with the drained mandarins. Thicken with a sauce thickener and pour over the fish. Bake in a preheated oven at 200°C (392°F) (180°C) for about 15 minutes. Serve with rice and a green salad. Tip: If you’re not too conscious of the calories, you can use cream instead of the skimmed milk.
