Cod in white wine and paprika à la Gabi

Ingredients for 4 servings:

  • 1,200 g cod fillet(s), ready to cook
  • 1 lemon(s), the juice and zest
  • Salt
  • 2 tbsp flat-leaf parsley, chopped
  • 1 onion(s), in rings
  • 1 pepper(s), red, cut into strips
  • 1 paprika powder, green, cut into strips
  • 1 yellow pepper(s), cut into strips
  • 3 tbsp butter
  • 250 ml dry white wine
  • 1 lemon(s), sliced, for garnishing
  • some parsley, for garnishing

Instructions

Working time approx. 40 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 25 minutes

Drizzle the fish with lemon, marinate for about 15 minutes, then season with salt and rub with lemon zest and parsley. Heat 2 tablespoons of butter in a saucepan and sauté the onion rings and bell pepper strips. Grease a casserole dish, place the fish in it, surround it with the vegetables, pour in the wine, and top with the remaining butter in small flakes. Cook in a preheated oven on the lowest rack at 225°C for about 30 minutes. Baste with the white wine stock several times during the cooking time. Serve the fish garnished with lemon slices and sprigs of parsley (on top of the lemon slices).
