Cod with fresh herbs

Ingredients for 4 servings:

  • 4 cod fillets
  • 6 tomatoes
  • 1 tbsp parsley
  • 1 tbsp thyme
  • 2 tbsp basil
  • 1 tbsp mustard, hot
  • 3 tbsp almonds, chopped
  • 4 tbsp breadcrumbs
  • 7 tbsp olive oil
  • 1 tbsp capers
  • 1 tbsp balsamic vinegar
  • 1 tbsp honey
  • 1 onion(s)
  • 1 garlic clove(s)
  • salt and pepper
  • Fat for the mold

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 55 minutes

Preheat the oven to 200°C (top/bottom heat, fan oven: 180°C). Chop the capers and mix with the herbs, mustard, almonds, and breadcrumbs. Add enough olive oil to form a compact mixture, then season with salt and pepper. Rinse the fish fillets, pat dry, season with salt and pepper, and place in a greased baking dish. Spread the herb mixture over the fish fillets and cook in the oven for about 15-20 minutes. Meanwhile, dice the tomatoes, peel and chop the onion and garlic. Sauté in 2 tablespoons of oil. Add the tomatoes and simmer for about 2 minutes. Season with honey, balsamic vinegar, and salt and serve with the fish.
