Ingredients for 4 servings:
- 250g mozzarella
- 2 m.-large zucchini
- 4 cod fillets
- 2 onions
- 250 ml tomato juice
- lemon juice
- Salt
- Thyme, fresh or dried
- pepper
Instructions

Cut the mozzarella into thin slices. Wash the zucchini and cut into 1/2 cm thick slices, season with salt, and let stand for a while. Discard any liquid. Season with pepper. Marinate the cod fillets with salt, pepper, and lemon juice. Slice the onions into rings, place them in a baking dish, and drizzle with seasoned tomato juice. Place the fish fillets on top and arrange the zucchini and mozzarella slices in a shingle pattern. Sprinkle with thyme to finish. Cook in a preheated oven at 200°C for about 15 minutes. Tip: For a crispy crust, add the fish and grill for a few minutes.
