Coffee and Cherry Muffins

The perfect coffee and cherry muffins recipe with a picture and simple step-by-step instructions.

  • 300 g Sour cherries from the glass
  • Or fresh, weighed pitted
  • 280 g Flour
  • 2,5 tsp Baking powder
  • 0,5 tsp Food atron
  • 160 g Sugar
  • 1 Egg
  • 60 g Oil
  • 50 ml Coffee strong
  • 200 ml Milk
  1. Make a cup of very strong coffee and let it cool down.
  2. Drain the cherries. Weigh out about 300g, use the remaining cherries and juice for other purposes. Halve or quarter the weighed cherries, depending on your taste.
  3. Mix the flour with the baking powder and baking soda.
  4. Whisk the sugar with the egg and fold in the oil.
  5. Add the flour mixture with coffee and milk to the egg mixture and whisk quickly. Finally mix in the cherries.
  6. Spread the dough in a muffin tin lined with paper liners and bake in a preheated oven at 180 ° C (top and bottom heat) for about 20 minutes

Note:

  1. Depending on the strength of the coffee and the desired taste of the muffins, add a little more or less coffee, but then adjust the amount of milk accordingly.
