Coffee and Cherry Muffins
The perfect coffee and cherry muffins recipe with a picture and simple step-by-step instructions.
- 300 g Sour cherries from the glass
- Or fresh, weighed pitted
- 280 g Flour
- 2,5 tsp Baking powder
- 0,5 tsp Food atron
- 160 g Sugar
- 1 Egg
- 60 g Oil
- 50 ml Coffee strong
- 200 ml Milk
- Make a cup of very strong coffee and let it cool down.
- Drain the cherries. Weigh out about 300g, use the remaining cherries and juice for other purposes. Halve or quarter the weighed cherries, depending on your taste.
- Mix the flour with the baking powder and baking soda.
- Whisk the sugar with the egg and fold in the oil.
- Add the flour mixture with coffee and milk to the egg mixture and whisk quickly. Finally mix in the cherries.
- Spread the dough in a muffin tin lined with paper liners and bake in a preheated oven at 180 ° C (top and bottom heat) for about 20 minutes
Note:
- Depending on the strength of the coffee and the desired taste of the muffins, add a little more or less coffee, but then adjust the amount of milk accordingly.
