Cold mango soup with ginger

Ingredients for 2 servings:

  • 1 large mango(s), ripe, peeled, roughly chopped
  • 2 tsp ginger, grated
  • 1 pinch of chili powder
  • 1 cup crème fraîche
  • 1 cup of natural yogurt
  • 100 ml milk
  • some lemon juice and zest of an organic lemon
  • salt and pepper
  • some sugar
  • 3 ice cubes
  • 2 sprigs of peppermint

Working time approx. 15 minutes; Rest time approx. 30 minutes; Total time approx. 45 minutes

a wonderful soup for hot days

Puree the ripe, peeled mango with a hand blender, then mix in the crème fraîche, natural yogurt, and milk. Add a little lemon juice and grated zest. Season to taste with chili powder, salt, pepper, and sugar. Add ice cubes and let it chill in the refrigerator for half an hour. Blend again until frothy before serving. Serve in attractive cups or glasses and garnish with peppermint.
