Cold Poppy Seed Cubes

The perfect cold poppy seed cubes recipe with a picture and simple step-by-step instructions.

  • Dough:
  • 7 Pc. Protein
  • 60 g Sugar
  • 2 Pck. Vanilla sugar
  • 150 g Ground poppy seeds
  • 50 g Cornstarch
  • 2 tsp Baking powder
  • 200 ml Milk
  • Cream:
  • 7 Pc. Egg yolk
  • 90 g Sugar
  • 100 g Food starch
  • 1 liter Milk – 100ml + 900ml
  • 250 g Butter at room temperature
  • 50 g Powdered sugar
  • Cream:
  • 500 ml Cream
  • Whipped cream stiff – I used San Apart
  • Chocolate sprinkles or other decorations
  1. Preheat the oven to 180 degrees with top-bottom heat. Beat the egg white until stiff, mix the sugar with the vanilla sugar and gradually add to the egg white. Keep beating until the sugar has dissolved. Now mix the poppy seeds, cornstarch and baking powder together and fold into the egg whites in portions. Pour approx. 40x25cm into a baking pan and bake for approx. 20 minutes.
  2. Let the bottom cool down a bit. In the meantime, heat the milk and pour over the still warm dough.
  3. Mix the egg yolks, sugar, cornstarch and 100 ml milk well with the mixer so that no lumps remain.
  4. Bring the remaining milk (900ml) to a boil. Remove from the stove and stir in the egg mixture. Turn back to a lower heat and stir until it starts to get thick, now stir vigorously for another 1-2 minutes. Let cool down at room temperature. However, I always cover my mass with cling film – directly on the mass, no air must be in between – otherwise a skin will form.
  5. When the “pudding” has cooled down, I sift it through a hair sieve again to avoid any lumps. Now mix room-warm butter with powdered sugar well. Now, tablespoon wise, mix the “pudding mixture” into the butter. This buttercream is now on the floor. You have to put the cake in the refrigerator for at least half an hour. To make the buttercream a little firmer.
  6. In the meantime, whip the cream with the cream until stiff. Take the cake out of the fridge and spread the cream on it. Put in the refrigerator at least 1 hour before consumption. TIP: Start with the cream because it takes a long time to reach room temperature !!!!!!!!!
