Ingredients
 

  • 650 -700 g White cabbage
  • 100 g Onions (shallots, red onions)
  • 1,5 tsp Salt
  • 2 tsp Sugar
  • 1 -,5 tsp Ground caraway seeds
  • 4 tbsp Lemon juice
  • 6 tbsp Olive oil
  • 2 -3 tbsp Freshly chopped mint (or 2 teaspoons dried)
  • 2 -3 tbsp Pepper

Instructions
 

  • Slice the cabbage finely or cut it very finely. Mix with 1 teaspoon each of salt and sugar and knead vigorously to break the fibers. Let it steep for 20-30 minutes and then squeeze out the water.
  • Cut the onions into thin, short strips. Mix all the ingredients and season to taste. Cover and leave to stand for at least an hour.

  • Instead of lemon juice, you can also use white balsamic vinegar, but then you need a little more.
  • Even if you don't like caraway, you should add something (0.5 teaspoons) to it, because it helps with the digestion of the herb.
