Ingredients for 4 servings:
- 500 g red cabbage
- 1 bell pepper(s), red
- 1 bell pepper(s), yellow
- 1 kohlrabi, approx. 400g
- 1 carrot(s)
- 3 tbsp olive oil
- 2 tbsp white wine vinegar
- 1 tsp liquid honey
- 2 tbsp lemon juice
- some cayenne pepper
- Salt and pepper, to taste
Instructions
Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes
Finely slice the red cabbage; this is best done with a cucumber slicer. Peel and finely dice the bell pepper. Peel and finely slice the kohlrabi and carrot. Blend a dressing from olive oil, vinegar, honey, lemon juice, and cayenne pepper. Pour over the salad, mix well, and let it marinate for at least 1 hour. Stir well again before serving and season generously with salt and pepper.
